Italian pizza dough: traditional rules
The pizza dough calculator determines flour, water, salt, and yeast for the desired number of dough balls, with adjustments for pizza style, hydration, leavening hours, and ambient temperature. Italy's 4 main pizza schools:
- Pizza Napoletana STG (Traditional Specialty Guaranteed by EU Reg. 97/2010, AVPN protocol — Associazione Verace Pizza Napoletana founded Naples 1984), 250-280 g dough ball, 60-65% hydration, 8-24 hour room-temperature fermentation, wood-fired oven 430-485°C for 60-90 seconds, raised cornicione 1-2 cm
- Pizza Romana (thin and crispy "scrocchiarella"), 180-200 g ball, 55-60% hydration, 24-48 hour cold fermentation, 320°C electric oven for 4-6 minutes
- Pizza in Teglia / al Taglio (Roman pan pizza), 220-250 g equivalent from block, 75-85% hydration (high), 48-72 hour cold fermentation, 250°C home oven for 18-25 minutes
- Padellino Torino (Piedmontese pan-style), 200-220 g ball, 70% hydration, iron pan 230°C for 8-10 minutes. A typical 250 g Neapolitan dough ball contains: ~152 g flour, ~99 g water (65% hydration), ~4 g salt (2.6%), ~0.2 g fresh brewer's yeast (24h at 18°C, Modenese 1990 cellular activity formula)
Italian flour industry leaders
Italy's flour industry leads the world in pizza-grade products: Caputo (Naples 1924, Mulino Caputo with Antonio-Cuoco-Pizzeria-Saccorosso lines, €100 mn 2024 revenue, exported to 80 countries, official AVPN partner); Le 5 Stagioni (Padua 1980, Agugiaro&Figna group, Northern Italy leader with Pizza Napoletana and Maestro Pizzaiolo lines); Polselli (Arce FR 1870, Tipo Classica, Super); Spadoni (San Mauro Pascoli FC 1929); Mulino Marino (Cossano Belbo CN 1965, organic); Mulino Quaglia (Vighizzolo PD 1975, La Magia gourmet); Petra Molino Quaglia (Vighizzolo PD 2008, gourmet pizza leader Petra 1, 3, 5, 9). Italian flours are classified by W strength (Chopin alveograph): W 200-240 Type "00" Neapolitan pizza 8-12h fermentation (weak, P/L 0.55-0.65); W 260-310 Type "00" Neapolitan 24-48h (medium); W 320-380 "0" or technical pan pizza/long fermentation 48-72h (strong); W >400 Manitoba for panettone and pre-ferments. EU Reg. 97/2010 codifies the AVPN protocol: only Type 0/00 soft wheat flours, water, sea or table salt, fresh brewer's yeast or natural mother starter.

Brewer's yeast formulas (Modenese)
Fresh brewer's yeast quantity depends on ambient temperature and fermentation hours. The Modenese 1990 formula (Italian Master Bakers): yeast_g = flour_kg · cellular_activity, where cellular activity decreases exponentially with time and temperature. Practical table for 1 kg flour 65% hydration: 2h at 25°C 30 g fresh yeast; 4h at 22°C 10 g; 8h at 22°C 5 g; 12h at 22°C 2.5 g; 24h at 22°C 1 g; 24h at 18°C 0.5 g; 48h cold 4°C 0.3 g (with double bulk + final proof); 72h cold 4°C 0.15 g. For dry brewer's yeast divide by 3 (1:3 fresh-to-dry ratio): e.g. 5 g fresh = 1.7 g dry. For natural sourdough mother use 30-40% on flour weight (250 g mother per 1 kg flour), with double leavening time. Poolish French pre-ferment 1840 (equal parts flour and water + 1% yeast, 12h ambient) improves cell structure and digestibility.

- Dinner 6 Roman scrocchiarella (200 g balls): total 1,200 g. Hydration 58%: flour 760 g, water 440 g, salt 20 g, yeast 0.5 g (48h cold). Home oven 320°C 5 min
- Roman pan pizza 60x40 cm (1 kg block): 80% hydration, flour 556 g (W 350), water 444 g, salt 13 g, yeast 0.3 g (72h cold, double knead). Home oven 250°C static 22 min
